The luxury car maker Cadillac in conjunction with Bon Appetit, Epicurious and Share Our Strength is sponsoring a culinary tour across the nation and recently made a stop at the Irvine Spectrum. Yours truly was invited to be a judge and witness Chefs Yvon Goetz (The Winery Restaurant and Wine Bar) and Mary Sue Milliken (Border Grill) go head to head preparing dishes focusing on sustainable fish.
On a bright clear day under the giant wheel at the Irvine Spectrum, I sat front row and picked tidbits from the chefs themselves as they focused on creating their signature dishes. Judging was done live and all courses were featured and screened on TV. What I liked best about this tour was a chance to get to know more about the chefs, how they operate as well as sample their signature dishes.
Both created wonderful fresh dishes featuring fish. Chef Mary Sue Milliken’s grilled fish tacos with cucumber citrus salsa featured a light fresh ceviche. While it tasted delicious, I felt that it lacked something. Chef Yvon Goetz went over the top with his chili lime rubbed Hawaiian Mahi Mahi with ginger jasmine rice and roasted tropical fruit chutney. The fish was flaky, the rice was creamy, and the blend of flavors worked. The complexity alone won Chef Yvon Goetz the vote for “Cadillac Chef.”
